After making a extremely large imperial stout we were able to rinse the grain further to extract enough to come up with this odd creation. Throwing caution to the wind we tossed the beer in a barrel and let it ferment au natural. We came up with a particularly aggressive wild yeast that we like to call “Sam”. He is an extremely sour, mouth puckering little bastard and has made a lovely addition to our collection. This is what Sam does to a stout, by himself, with no one else to maintain him. Prepare yourself, and enjoy.

Cafe de Funk

  • Style: Barrel Aged Extra Chocolate Stout
  • ABV: 8.2

This beer is barrel aged in barrels for 6-12 months and blended to create a unique stout. Rich belgian chocolate is added to the batch to pair with the sweet oak and bourbon notes from the barrel. We also added a bit of funk in the beer that shows up with a slight tartness in the back end of the beer. Fresh coffee is locally used from Blind Dog Coffee Roasting and added in specific intervals over the aging process to pair with the hops in making a complex balance to the sweetness. This beer becomes increasingly aromatic as it steadly warms up while you are drinking it, crafting what we hope is an excellent drinking experience.

Satan’s Chimney

  • Style: Smoked Sour Ale
  • ABV: 6.4
  • IBU: 26.6

The first in an experimental batch of smoked ales. We took the idea of a traditional german rauchbier and merged it with some american/english infulences. From there we decided to push one step further and add one of our house sour yeasts to the ale. The beer has a nice medium sour on the the nose that transitions into a smokey yet slightly sweet malt finish.

Pumkin Pie Saison

October brings us to our brew masters favorite season. A time of harvest, celebration and change of season. This beer is made with real roasted pumpkins, graham crackers, and a myriad of spices. The aromatics of this beer should remind you of homemade pumpkin pie from your childhood. The flavor profile has a full bodied taste with pumpkin and graham crackers being the primary notes, followed by hints of Cinnamon, clove, and nutmeg on the back end. Perfect for a cooler fall evening with friends and loved ones.

Double IPA

We decided our first IPA need to set a standard for what we do here at The Brewer’s Cabinet. What better way to do that then make it a double and have it clock in at over 10% and over 100 IBU’s. After all those hops and malts were put in we decided we might as well dry hop the thing too. This beer is not for the shy. It is has some amazing hop bitterness, is very aromatic, and should quench any hop heads thirst.
