Beers that aren’t currently on draught, but saved for legacy posts.

Double IPA

  • Style: Double IPA
  • ABV: 10.5
  • IBU: 111

We decided our first IPA need to set a standard for what we do here at The Brewer’s Cabinet. What better way to do that then make it a double and have it clock in at over 10% and over 100 IBU’s. After all those hops and malts were put in we decided we might as well dry hop the thing too. This beer is not for the shy. It is has some amazing hop bitterness, is very aromatic, and should quench any hop heads thirst.

Blood Orange Wit

  • Style: Belgian Wit
  • ABV: 6.3
  • IBU: 13.4

At the BC we have a rotating Belgian Wit. We add various fruit(s) to the brewing process, depending on what is in season. This is a medium bodied wheat beer, with citrus notes and a slight tartness from the blood oranges that are added. We zest all the blood oranges by hand to add an aroma profile that complements to the taste of the blood oranges in the beer. This is a very labor intensive beer and we are happy to offer it when these amazing fruits are available to us.

Summer Saison

  • Style: Saison
  • ABV: 5.5
  • IBU: 25.5

Our summer saison started as an experiment with some new yeast strains we were trying out. Through this experimentation we found what we feel is a superb saison yeast for a refreshing summer beer. We decided show case this yeast by leaving this saison completely unspiced. We used a variety of malts to add depth and body to this beer, but the majority of the flavor profile is derived from the yeast.

Bitter Bender

  • Style: Pale Ale
  • ABV: 6.0%
  • IBU: 70

Pale Ale made from the second runnings of our barrel aged barleywine (Barrique). Generously hopped with 5 different varieties of hops to give a complex bitter taste and aroma

  • Style: Barrel Aged Barleywine
  • ABV: 12.0
  • IBU: 112

Our barley wine is oak aged in barrels for six months to a year. This aging process produces a very complex beer with many flavors. Amongst these are notes of vanilla, nut, toffee, bourbon and superb oak notes

  • Style: Berliner Weisse
  • ABV: 3.5
  • IBU: 6.6

Berliner weisse style ale, very light bodied wheat beer, with a sharp sour character. Traditionally a summer drink in Germany, in which some add syrups to counter the sourness. We added Black berries to the beer to balance the beer and give it a unique appearance and aroma. This beer is aged for 3-6 months to produce the complex sour flavors.

  • Style: Sour Saison
  • ABV: 7.5%

A very tart saison. Primary fermentation with saison yeast, elderberries, and heather tips. Secondary fermentation in french oak port barrels with a lambic yeast. Very complex flavors, in a amber bodied saison, not for the faint of heart.

  • Style: Triple IPA
  • ABV: 11.6
  • IBU: 111

Triple IPA that has been given generous amounts of hops during the brewing process, featuring hints of pine, grapefruit, and citrus. Dry hopped multiple times, this beer features very intense herbal and floral aromatics with a slight hint of smokiness. To balance out this ridiculous amount of hops, we used a large grain bill with extremely flavorful malts.
